The Dish

Greetings,

We recently had our November Food Group meeting and we celebrated all foods Thanksgiving. The food at this meeting was especially good. Here is one recipe.

"The Dish"
  • 1 large can sweet potatoes (around 30 oz)
  • 1/3 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 teaspoon flour (to help thicken, you can use more if need be)
  • 1/2 stick butter/margarine
  • 1/2 cup pecans
  • Marshmallows (enough to cover the top)

Drain juice from can(s) of sweet potatoes and set aside juice. Mix brown sugar, white sugar, pecans, and flour - mix well. Add juice from sweet potatoes and butter to a pot big enough to contain the mixture - bring to a simmer. Pour dry mixture into juice on the stove and whisk together so that there are no lumps. Bring the mixture to a slow boil and then let simmer. Add sweet potatoes and cook on low heat until sweet potatoes are tender. Pour mixture into an oven safe dish and then add marshmallows and put in oven at 350 until browned.
