Chili Contest - Winner Chili Recipe, almost...

February 08, 2011 Chili Contest – Judges Choice Winning Chili

• Canned: dark kidney beans, light kidney beans, black beans (drain all beans), tomato sauce, diced tomatoes, crushed tomatoes, tomato paste (2 tablespoons)

• Spices: black peppercorns, green peppercorns, cumin seeds, fresh garlic very thinly sliced, oregano, turmeric, granulated garlic powder, ground cumin, chili powder (my own mixture), smoked paprika, Hungarian paprika

• Fresh peppers: green bell, poblano , anaheim, jalapeño, serrano, habanero , bhut jolokia

• Dried peppers: Tabasco , cayenne, jalapeño, serrano, ancho, smoked hot plum, smoked jalapeño

• Meat: completely trimmed chuck roast marinated in dry rub (chili powder) over night after being cut into bite sized pieces, sautéed medium rare and added at the last minute to the chili

• Adjust seasoning during cooking to personal taste

• Serve with your favorite rice and sides of finely chopped cilantro, sour cream, sliced lime, your favorite shredded cheese, onions, finely chopped fresh pepper mixture w/seeds removed
